1 lb. river shrimp
Recipe shrimp toast mix
1 cup chopped bok choy
1 tbl. chopped ginger
1 tbl. garlic powder
corn starch paste as binder
1 red pepper julienned
1 green pepper julienned
SWEET & SOUR SAUCE:
2 tbl. ketchup
1/3 cup sugar
1/3 cup vinegar
1/2 cup broth
- Puree shrimp and prepare as for shrimp toast.
- Chop bok choy very fine. Do not use processor.
- Mix all ingredients together then add corn starch to bind.
- Prepare sauce and cut up peppers, sprinkle with oil.
- Form into balls, let stand 1/2 hour, then deep fry.
- Stir fry peppers separate then add to shrimp balls and stir fry together.
- Make sauce separate. Pour over shrimp on platter.
