1-2 chicken breasts cut into 8-10 pieces
2 pieces scallions for each packet
cup dried mushrooms, tree ears, or American caps
10-12 pieces aluminum paper (6x6)
1 egg beaten

SAUCE:

2 tbl. oyster sauce
2 tbl. water
2 tsp. sesame oil
2 tbl. soy
1 tsp. sugar

Cut up and marinate chicken for 1/2 hour. Cut scallions into 1 inch pieces. Set aside. Mix sauce ingredients. Set aside. Heat 2-3 cups oil for deep frying. Drain chicken. Add scallions, mushrooms, some sauce. Wrap envelope style. Seal with egg. Deep fry 5 minutes a few at a time. Cook in 3 batches. Serve with rice.
