1 lb. beef steaks, cut 1/2 x 3/4" strips
3 tbl. chopped ginger
1 tsp. chopped garlic or flakes
1 scallion, cut 1" pcs.
1/4 c. sesame oil
1 tsp. dark soy
1 tbl. oyster sauce
MARINADE:
6 tbl. garlic oil
3 tbl. soy
1 tbl. wine
1 tsp. chopped garlic
1 tbl. corn starch paste
- Marinate beef 30 minutes.
- Heat wok, 2 tbl. oil very hot. Add beef in two batches. Set aside.
- Reheat wok. Add scallions, ginger, and garlic on low heat till warm. Add beef. Cover 2 minutes. Add a little broth. Optional: corn starch paste.
OPTIONAL ACCOMPANIMENTS:
1/2 lb. lo mien or Italian vermicelli. Cook 5 minutes. Drain, cool, then pan fry. Mix in some scallions or 4 tbl. frozen green peas. Cover with beef and serve.
