1 lb. minute steaks

BATTER:

1 egg + yolk from marinade
5 tbl. corn starch

MARINADE:

1 egg white
1 tbl. garlic oil
1 tbl. corn starch
1/2 tsp. each of sugar and salt (mix well)

SEASONINGS:

2 whole scallions minced
1 pc. ginger chopped
2 tbl. wine
2 tbl. water
1/2 tsp. each of salt and sugar mixed
2 tbl. soy sauce + 2 tbl. sesame oil

SAUCE:

1 1/2 cups broth
1 tbl. oyster sauce
1 tsp. soy and corn starch paste

Julienne beef and marinade 1/2 hr. Mix beef and batter together, heat wok with 2-3" oil. Divide beef in 3 portions and deep fry for 1/2 min. Clean and return wok with 3 tbl. oil, add scallions, ginger; stir 30 sec.; add wine, soy, salt and sugar, sesame and water and heat well. Add beef to sauce, cover and cook 2 minutes.
