1 chicken breast
1/2 - 1 lb. lo mien noodles
1 kirby cucumber, julienned

MIXING SAUCE:

2 tbl. Szechwan sauce
1 tbl. rice vinegar
2 tbl. chopped ginger
1 scallion chopped fine

PEANUT SAUCE:

3 tsp. ginger-garlic mix
6 tbl. creamy peanut butter +
2 tbl. light soy mixed till smooth
3 tbl. sesame oil mixed into peanut butter
2 tsp. chili oil
  1. Cut up chicken - marinate chicken - cucumber and chili oil.
  2. Boil noodles - drain - set aside.
  3. Assemble sauces.
  4. Fry chicken 1 minute, add mixing sauce, cook 1/2 minute.
  5. Add peanut sauce - mix well.
  6. Add cucumber - cover 1/2 minute.
  7. Pan fry noodles 1 minute, put in bowl, add meat, mix and serve.
