1 chicken breast
1/2 - 1 lb. lo mien noodles
1 kirby cucumber, julienned
MIXING SAUCE:
2 tbl. Szechwan sauce
1 tbl. rice vinegar
2 tbl. chopped ginger
1 scallion chopped fine
PEANUT SAUCE:
3 tsp. ginger-garlic mix
6 tbl. creamy peanut butter +
2 tbl. light soy mixed till smooth
3 tbl. sesame oil mixed into peanut butter
2 tsp. chili oil
- Cut up chicken - marinate chicken - cucumber and chili oil.
- Boil noodles - drain - set aside.
- Assemble sauces.
- Fry chicken 1 minute, add mixing sauce, cook 1/2 minute.
- Add peanut sauce - mix well.
- Add cucumber - cover 1/2 minute.
- Pan fry noodles 1 minute, put in bowl, add meat, mix and serve.
