1 lb. rice noodles
1 oz. dried shrimp
1 c. sliced pork (1 pork chop)
1/2 c. bamboo, julienned
4 black mushrooms, sliced
1/2 stalk celery, julienned
1/2 scallion, chopped fine
SAUCE INGREDIENTS:
2 tbl. dark soy
1 tbl. sesame oil
1/4 c. broth
1/2 tsp. salt (l.s.)
- Soak rice noodles, mushrooms, dried shrimp in warm water separately till soft then drain. Discard stems of mushrooms.
- Cut bamboo and scallions (match stick size), set aside. Cut celery in two lengthwise, then slice diagonal the same as the bamboo and scallions.
- Stir fry the pork, add the mushrooms, bamboo, scallions, mix well 2 minutes, then add the sauce ingredients. Cover 2 minutes. Set aside.
- Fry noodles in 2 tbl. hot oil till hot, add cooked ingredients. Mix well with noodles. Serve.
