1 lb. rice noodles
1 oz. dried shrimp
1 c. sliced pork (1 pork chop)
1/2 c. bamboo, julienned
4 black mushrooms, sliced
1/2 stalk celery, julienned
1/2 scallion, chopped fine

SAUCE INGREDIENTS:

2 tbl. dark soy
1 tbl. sesame oil
1/4 c. broth
1/2 tsp. salt (l.s.)
  1. Soak rice noodles, mushrooms, dried shrimp in warm water separately till soft then drain. Discard stems of mushrooms.
  2. Cut bamboo and scallions (match stick size), set aside. Cut celery in two lengthwise, then slice diagonal the same as the bamboo and scallions.
  3. Stir fry the pork, add the mushrooms, bamboo, scallions, mix well 2 minutes, then add the sauce ingredients. Cover 2 minutes. Set aside.
  4. Fry noodles in 2 tbl. hot oil till hot, add cooked ingredients. Mix well with noodles. Serve.
