This is a scrambled egg with pork and chopped hard vegetables served with or without pancakes.
1/4 lb. pork chops or fresh ham
3 eggs
1 scallion, cut 1" pcs.
2 tbl. broth
2 tbl. light soy
1 tbl. ginger wine
2 tbl. tree ears
1/4 c. bamboo shoots, sliced
1 tbl. chopped ginger
- Cut pork julienne style.
- Scramble eggs till set.
- Soak mushrooms. Julienne bamboo shoots.
- Stir fry pork 1 minute. Add mushrooms, bamboo shoots, ginger wine, and soy. Mix well. Add scrambled eggs. Mix well and serve with pancakes.
- Pancakes can be bought and then defrosted. Folded, steamed then filled by each person.
