This is a scrambled egg with pork and chopped hard vegetables served with or without pancakes.

1/4 lb. pork chops or fresh ham
3 eggs
1 scallion, cut 1" pcs.
2 tbl. broth
2 tbl. light soy
1 tbl. ginger wine
2 tbl. tree ears
1/4 c. bamboo shoots, sliced
1 tbl. chopped ginger
  1. Cut pork julienne style.
  2. Scramble eggs till set.
  3. Soak mushrooms. Julienne bamboo shoots.
  4. Stir fry pork 1 minute. Add mushrooms, bamboo shoots, ginger wine, and soy. Mix well. Add scrambled eggs. Mix well and serve with pancakes.
  5. Pancakes can be bought and then defrosted. Folded, steamed then filled by each person.
